天然的燕窝才是真正的燕窝。个别不法商人在燕盏上涂上蛋白或啫喱以增加重量，这种燕窝在灯光照射下会显不透明状态。而真正的燕盏在灯光照射下是透光的。至于有人用「马来胶」或「猪皮」冒充的假货，前者有酸味，无丝条状，后者经浸水后水面上会有少少浮油及混浊。
对于好坏品级的分别，概括地说，品质较好、级别较高的燕窝肯定是营养价值较高、发头较大，外观也较整齐、漂亮；品质较差、级别较低的货品在营养、发头方面较差，甚至「卖相」也不那么讨好。
